Bake the galette at 450 degrees F for 10 to 15 minutes, or until the crust is blond and blistered. Lower the heat to 350 degrees F (the lower temperature will help keep the exposed fruit from drying out) and bake it for another 35 to 50 minutes. Rotate the galette front to back about halfway through to ensure even baking. The galette is done when the crust is golden and juices from the fruit bubble slowly at the edge of the ruffled crust. If you baked your galette in a pan, set that pan on a wire rack and let it cool for at least an hour before serving.
