Here we present a three course teaser: “Carpaccio a la Wilderness” with herb marinated tenderloin, followed by “Papillote of Salmon” with vegetables and herbs in a flavorful fish stock, and ending with “Red Pears” poached in wine with cloves, cinnamon and orange. Mmmm.
